Tortellini in broth
- Koch’s tortellini stuffed with meat – 1 Kg
- 3 carrots
- 2 onions
- 3 celery stalks
- Bay leaves
- 1 bunch of parsley
- 500 g of chicken (ready to cook)
Rinse the chicken well, beat it and season it.
Cut the celery, onion and carrots into small pieces and sauté them in a soup pot with some sunflower oil. Add the chicken, doing the same operation.
Boil everything by adding approx. 2 litres of water for 2 hours. Seasoned with laurel, pepper, salt and parsley.
In another pot prepare the classic tortellini, for about 8 minutes.
Dip them in boiling salted water and cook slowly. They’ll be ready once they’re afloat. If you use pre-cooked pasta, it takes about 4 minutes before it’s ready.
Alternatively, you can cook them in the broth.
Serve the tortellini with chopped chives.
Tip: dust them with Parmesan cheese!
