Sweet potato gnocchi with rocket salad, cherry tomatoes and feta.
- 1 Kg of Koch’s gnocchi refined with sweet potatoes
- 200 g cherry tomatoes
- Rocket salad
- 100 g of feta
- Salt (for cooking water)
Heat water in a large pot over high, till the water boils.
Dip the frozen gnocchi in boiling salted water and cook for about 2 minutes. They will be ready once afloat.
Drain them with a skimmer.
For the sauce
Melt some butter in a pan, sauté the cooked sweet potato gnocchi. Heat the butter in a saucepan over medium heat. Add cherry tomatoes, feta and rocket-salad. Cook, stirring, for 2 minutes and season with salt and pepper.
Tip: decorate the plate with rocket-salad leaves.
