The puff pastry is a multi-layered dough, which has its origin in the Mediterranean area. It is formed by rolling out and knocking together the dough several times. At Koch, the dough consists of 144 layers. Therefore it is baked, very airy and crispy.
The freshly frozen puff pastry is suitable for both sweet and savoury dishes. It is suitable for many uses: it can be used for birthday cakes, appetizers or breakfast pastries.
Let each individual dough sheet thaw for around 30 minutes.
Thoroughly dust working surface with flour then roll out each dough sheet and proceed as usual.
N.B.: do not knead the dough, just roll it out!
Bake in a preheated oven at 180°-200°C until golden-brown as required.
