Dumplings with speck in broth
- Koch’s dumplings with speck, 300 g
- 3 carrots
- 2 onions
- 3 celery stalks
- 3 bay leaves
- 1 bunch of parsley
- 500 g chicken
- 2 litres of water
Rinse the chicken well and season to taste. Chop the celery, onion and carrots. Fry them in a saucepan with sunflower oil. brown the chicken. Pour 2 litres of water into the pan and cook for approx. 2 hours. Season with bay leaves, pepper, salt and parsley.
If you prefer, you can choose a different broth (e.g. beef).
Dip the frozen dumplings in boiling salted water and cook for about 20 minutes. Once ready, drain them with a skimmer.
Serve them with chicken broth and add freshly cut chives.
Tip: cook the dumplings directly in broth!
